FOR THE DOUGH
-250 gms All-purpose Flour
-150 ml Water
-10 gms Baking Yeast
-50 ml Extra Virgin Olive Oil
-5 gms Salt
-Sugar (pinch)
FOR THE STUFFING
-500 gms Button Mushrooms
-10 gms Dried Porcini
-50 gms Onion (chopped)
-100 gms Butter
-200 gms California Walnuts
-5 gms Garlic (chopped)
-5 gms Thyme (chopped)
Method:
Soak the Porcini in little warm water. Remove the soft Porcini, keep water aside.
Sauti? in the butter the chopped Button Mushrooms. Add the Onions, Porcini and the Garlic.
Sauti? for 5 more minutes until they become brown. Add the Porcini water to the mixture and reduce.
In a bowl crush the Walnuts to a coarse texture. Add the Mushroom mixture and the Thyme.
Season with salt and pepper.
For the dough, take water the Sugar, Yeast, Salt and dilute in lukewarm water (given quantity)
Add the Olive oil and the flour and knead to a firm but elastic dough.
Let the dough rest for 30 minutes.
Roll the dough thin and cut into coffee mug sized roundels.
Add the stuffing into the middle and overlap to a half moon shape.
Bake in the oven at 180 degree Celsius for 10 minutes.
