OMM350 measures water activity (aw) and temperature of oil. Water activity is a relative parameter for moisture. Water activity is the intensity with which water is associated with various non-aqueous constituents and solids in the oil. In some applications, water activity is more important than absolute water (ppm) "as it directly conveys the possibility of water separation.

Water formation in oil for some processes can lead to catastrophic failure or accidents. Absolute water (ppm) gives no indication, to warn you, that the oil has come dangerously close to the saturation point. However, water activity gives you an immediate indication.
