Microwave roasting regard the heated material as heaing unit,microwave roasting effect can instantaneously go deep into the inside material, make the material inside and outside heat at the same time, do not need to heat transfer process,so the temperature raise very quickly,greatly shorten roasting time, the required roasting time is quarter of the conventional methods in general.
Roasting is same with other food processing,is a complex system of physical chemistry , Needorderly occure and have suitable time/temperature conditions. Microwave rapid heating can cause fracture, excessive expansion of baked products or explosion.
