We are involved in exporting, manufacturing and supplying of green cardamom in Bengaluru, Karnataka, India. Green cardamom is regarded as the third most expensive spice after saffron and vanilla. It is the dried fruit. When dried it is the seed that is the source of essential oil and sweet aroma. Seeds contains 6 to 7% of essential oil i.e. Terpineol and linalool esters along with 18 Both forms of cardamom are used as flavorings and cooking spices in both food and drink, and as a medicine. Cardamom has a strong, unique taste, with an intensely aromatic, resinous fragrance. Black cardamom has a distinctly more smokey, though not bitter, aroma, with a coolness some consider similar to mint. Green cardamom is one of the most expensive spices by weight,[citation needed] but little is needed to impart flavor. It is best stored in pod form because once the seeds are exposed or ground, they quickly lose their flavor. Grinding the pods and seeds together lowers both the quality and the price. For recipes requiring whole cardamom pods, a generally accepted equivalent is 10 pods equals 1 1a 2 teaspoons of ground cardamom. It is a common ingredient in Indian cooking.
