Green cardamom is regarded as the third most expensive spice after saffron and vanilla. It is the dried fruit. When dried it is the seed that is the source of essential oil and sweet aroma. It is best stored in pod form because once the seeds are exposed or ground, they quickly lose their flavor. Grinding the pods and seeds together lowers both the quality and the price. For recipes requiring whole cardamom pods, a generally accepted equivalent is 10 pods equals 1 1a 2 teaspoons of ground cardamom. It is a common ingredient in Indian cooking.
