Cardamom

Green cardamom, also known as true cardamoms the most common variety in the spice supermarket. It plays a vital role in enhancing the aromatic properties of many sweet dishes as well as savory items. Cardamom is mostly grown in tropical areas like India, Malaysia, and Costa Rica.

On the other hand, black cardamom which has a smoky element has larger pods that are dark brown and are more suitable for savory dishes. It is mostly grown in the eastern Himalayas.

Cardamom is considered to be the most commonly used Indian whole garam masala in various types of vegetables, and meat curries. It is profoundly used in both sweet and savory items, and can be efficiently used in rice puddings, cakes, payasam, and more. Similarly, cardamom pods can also be used in cooking meats, vegetable, and gravies. If added, it enhances the flavors of soups, chowders, casseroles, and marinades. One of the core ingredients of Garam Masala which is added to curries, gravies, and rice dishes is black cardamom.

Cardamom should be stored as whole pods in a sealed container in a cool, dry place. Ground cardamom can also be stored in a similar manner but since has a short shelf life and quickly loses potency, it should be used as soon as possible.
