Chitosan is made by removing part of the acetyl group from chitin, and chitin has many different sources, usually found in the shells of marine arthropods such as shrimps and crabs, the shells of insects, the cell membranes of fungi and algae, mollusks Shells and skeletons and cell walls of higher plants. Currently most of the common products in the world come from shrimp & crab shells, and the output is relatively large; however, with the improvement of living standards, and the reasons that most European and American customers are allergic to shrimp, crab and other marine products, we have developed fungal source of chitosan, and scaled up production. At present, this series of products are divided into Mushroom source and Aspergillus niger source. Mushroom-based are further divided into those derived from Shiitake mushrooms(Lentinus edodes) and those derived from Agaricus bisporus.
