Sunflower seeds are one of the highest sources of the extremely important Vitamin E, the body's primary fat soluble antioxidant. It thus prevents the oxidation of cholesterol helps reduce the chances of block arteries, heart attacks and strokes. Vitamin E's anti-inflammatory effects have also been linked with reduction in symptoms of Asthma, Osteoarthritis and Rheumatoid Arthritis.
