It is chosen when mature, with care, for its flavours and appearance.
Jam is traditionally made in copper preserving pans.
All the jams are cooked in cauldrons, in small quantities, by steam, to keep watch over the development and to control the quality of the product obtained.
Controlling the cooking is a stage of paramount importance which requires permanent supervision and considerable human expertise. The natural flavour is brought out of the preserved fruit slowly in hot cane sugar.
The quality.
The quality is on the spot from the point where the fruit is received up to labelling to guarantee food safety and to abide by the standard of quality. A laboratory permanently checks that the production instructions are applied.
