Totapuri Mangoes: Fruit Description
Totapuri mangoes are one of the best varieties of mangoes from India. They are usually about 6 to 8 inches in length and are oblong in shape with a prominent beak in their appearance. The skin of this variety is generally thick and appears in green, yellow and a fanciful combination of these two colors. Usually the skin is inedible. The pulp of the Totapuri mangoes surrounds a large seed at the centre. The colour of the pulp ranges from pale yellow to bright yellow. This variety has a characteristic aromatic flavour combined with a highly delicious taste that account for their universal popularity. In the taste of this variety, you will find sweetness and acidity blended perfectly. This variety is one of the most abundant sources of vitamins A and C.
Processing Method
Mango pulp is manufactured using select types of fresh mango fruits. To start with, fully ripe mangoes are harvested from trees and taken to the pulp processing unit. The quality of the product is checked and mangoes are thoroughly washed. The selected perfect quality mangoes are taken to the ripening chambers. Once the mangoes are fully ripened, then they are washed, blanched, pulped and the seeds are removed. The pulp goes through processes namely centrifuging, homogenizing, and concentration.
