Calcium Alginate
Calcium Alginate is a white to pale yellow color powder which is a divalent metal salt of alginic acid. It is insoluble in water, has good dispersion property and it can be slowly soluble in salt or alkaline solution to form a viscous glue.
Features
- It is considered as a food binder, water retention agent and thickener. In the influence of salt presented in the food, the exchange of calcium & sodium thickens the calcium gum, especially with the usage of sodium alginate.
