Pasteurization principle is within certain temperature scope . Temperature the lower , bacteria breed the slower . Temperature the higher , bacteria breed the faster . If higher than certain temperature , bacteria will die . Different bacteria has different adaptive temperature . After pasteurization , we kill harmful bacteria and retain beneficial bacteria .
