Instant tea powder concentrate is extracted from tea wastes, processed leaves, or concentrated under low pressure, undried fermented leaves, and then freeze-dried, spray-dried, or vacuum-dried to produce instant tea powder. The fermented tea is made by picking the leaves, letting them wither until around two-thirds of their original water content has evaporated, and then rolling them to break down their cell walls. The amino acids in the crushed leaves then undergo a chemical reaction, known as fermentation. During fermentation, molecules known as catechins undergo changes that result in antioxidants that are good for the human body.
