For really dull or broken blades you may need to repeat this process anywhere from three to six time every time pushing the knife through the coarser slot of the sharpening from the foot to the tip with high force. Knives can be oversharpened if they are sharpened using a V-sharpener an electric sharpener or a rough diamond stone. Maintain the knives by sharpening them at least twice a year but no more than once a month is necessary.
