Some electric sharpeners may destroy blades if they are used recklessly, thus the answer is yes. If not handled properly and with caution, they have the potential to be highly aggressive and remove an excessive amount of metal from the blade. Yes, the angle, the pressure, and the movement are all important components of the honing process for a knife. A dull blade, or even worse, a nicked and jagged edged blade, is the result of one or more of these components that are not functioning properly. Some blades, such as high-end Japanese knives, in my opinion should never have their edges sharpened.
The use of either a whetstone or an electric sharpener to get the knives razor sharp at home (also called a sharpening stone). Stones are chosen because they are cheaper, easier to use, and less harsh on the blades than electric sharpeners. Use a whetstone like this one to restore the edge of the fine knife. It's cheap for a kitchen utensil and will serve them well for many years. Put a rubber mat or towel down first before doing anything else on a slick tabletop; don't want to damage it. Turn the stone over to its rougher side when ready to begin honing.
For really dull or broken blades, you may need to repeat this process anywhere from three to six time, every time pushing the knife through the coarser slot of the sharpening from the foot to the tip with high force. Knives can be oversharpened if they are sharpened using a V-sharpener, an electric sharpener, or a rough diamond stone. Maintain the knives by sharpening them at least twice a year, but no more than once a month is necessary.
Long and thin, a sharpening steel is used to further refine the edge of a knife that is already quite sharp. The fingers will do the pushing to refine the point. Stroke the blade till it reaches the other edge of the whetstone, pressing the tip with the fingers to retain the angle, and then draw the blade back until it hits the edge of the whetstone. To keep their knives, razors, scrapers, and more razor sharp, cooks often turn to whetstones. To clean or wash away the metal that comes off the edge of the instruments during sharpening, he says, they may be made to require either water or oil for lubrication.
