After being poured into a churning cylinder the cream is beaten with beaters using a motor with a range of speeds. The butter grains and buttermilk undergo a rapid transformation in the cylinder before moving on to a draining portion. Sometimes on the way either with water or recirculated cooled buttermilk the butter grains are given their first cleaning. In the draining part a screw both drains the butter and transports it to the next phase of the process. When the butter leaves the processing area it travels via a conical canal to drain any remaining buttermilk. The butter can be washed again immediately afterward this time with two rows of adjustable high-pressure nozzles.
