Q. Do knife sharpeners ruin knives?
Answer
Some electric sharpeners may destroy blades if they are used recklessly thus the answer is yes. If not handled properly and with caution they have the potential to be highly aggressive and remove an excessive amount of metal from the blade. Yes the angle the pressure and the movement are all important components of the honing process for a knife. A dull blade or even worse a nicked and jagged edged blade is the result of one or more of these components that are not functioning properly. Some blades such as high-end Japanese knives in my opinion should never have their edges sharpened.
