Different grades of Indian cane white crystal sugar are designated by the numbers S-30 and S-31. The letter S symbolises the various sizes of sugar grains. Sugar granules designated with the letter M are Small-Sized Letter S signifies medium grains of sugar. The whiteness of the colour of the sugar granules is defined by the numbers 30 and 31. Sugar of the 31-colour grade has a whiter appearance than sugar of the 30-colour grade and as a result it is more expensive than sugar of the 30 grades.
