To begin with, biogas is the gas that results from the decomposition of organic waste in an anaerobic environment (one that does not contain oxygen). Simply put, everything that may rot, with the exception of wood, can be stored in a biogas generator's enormous tank. Big organic polymers, such as those found in food scraps, need to be broken down first, and this process, called hydrolysis, is the first step in the digestive process. An integral part of anaerobic digestion, hydrolysis reduces macromolecules like lipids, proteins, and carbohydrates to their constituent simple sugars, fatty acids, and amino acids.
