Q. Can you use broken rice to make sushi?

Ideally sushi rice has a different texture than white rice. It is stickier and its grain is short in size when compared to white rice which has a medium to long grain size. Sushi rice also contains more starch than white rice. Having said that because broken rice have shorter grains when cooked with the right amount of water it can mimic the texture of sushi rice. However the taste will be different from sushi rice which has a distinctive flavor.
