Induction cooking is a method of cooking whereby electric currents are used to directly heat cookware by means of magnetic induction. Induction cooks the cooking vessel itself is almost instantaneously as opposed to thermal conduction which uses a gas or electric element to transfer heat from a burner to a pot or pan. There is a coil of copper wire just under the ceramic plate of an induction cooktop and when a pot is set on top an alternating electric current is sent through the coil and into the pot.
