derived from the deep sea natural seaweed, is pure natural gelling agent which can forms transparent gels. Agar is ideal for thickening and gelling in food without affecting color and taste. The gelling ability is ten times higher than animal gelatin, with low dosage and strong gelling capacity. There is additional benefit that agar with very high content of soluble fibre(almost 90%) and minerals. Agar is colorless, odorless and brings no negative effects to human beings. It is a "scavenger " for our intestines, stomachs and blood vessels. It makes good effects on weight-loss, health, beauty care, body function improvement, etc.

Comparing with other food hydrocolloids, such as carrageenan and pectin, the agar itself can form gel without adding other agents(like salts) to set. Thus, it contains much less ash than other gelling agents.

1.Suspending agent:

A process for preparing a gelled beverage which involves dispersing Agar gum and other beverage ingredients in solution agitating the solution, heating the solution while stirring, and concurrently rapidly cooling and shearing the solution. The beverage, which does not require the presence of other gelling agents or stabilizers, contains between about 0.1% and 0.5% Agar gum.

Jelly:

Agar agar is widely applied in the jelly processing as the gelling agent, compared with sodium alginate, gelatin and carrageenan, the jelly produced by the jelly powder which is prepared by the Agar gum, has an excellent transparency, flavor-releasing and slippery taste,which will not be dissolved in the summer and has a good shrink resistance. In addition, it has a low consumption and convenient in processing.

Agar Gum is widely applied in the jam processing as the gelling agent, compared with sodium alginate, gelatin and carrageenan, the jam which is prepared by the Agar gum, has an excellent flavor-releasing transparency, slippery taste.
