It is the small stony seed from the pod of a bean-like plant. The seeds are hard, yellowish brown and angular about 3mm in size. These seeds are powerful, aromatic and bittersweet, somewhat like burnt sugar. These seeds contain alkaloids, proteins, fiber, vitamin C, niacin, potassium, and iron.

USES:

Commercially it is used in the preparation of mango chutneys and as a base for imitation maple syrup. Incorporate these seeds into chutneys and hot pickles for a tangy aroma and flavor. It is also used medicinally and as a yellow dyestuff. IT is also an oriental cattle fodder and is planted as a soil renovator. These amber colored seeds are used extensively in cooking throughout Asia and are one of the base ingredients in curry powder, especially vindaloo and hot Sri-Lankan curries.
